Curry Pepper Gyro

Y’all I love peppers so much especially when they are great for my health. So I wanted to have a simple healthy delicious breakfast this morning in this dreadful weather. So I decided I would have a curry pepper gyro. It is just as simply as one two three.

Let’s start with the ingredients.

*Green Pepper

*Orange Pepper

*Yellow Pepper

*Red Pepper

*Curry Powder

*Garlic Salt

*grated onion season


*olive oil

*vegan butter

*vegan sour cream

*spicy avocado hummus

*apricot jam


*flat bread

*vegetable cooking spray

Cut peppers to your liking

Oil them with olive oil

Season with garlic salt, onion powder, pepper, and curry powder. Rub the seasons onto the peppers all over

Spray baking dish with oil

Place the peppers in baking dish. Roast at 400 degrees for 20 minutes on one side then flip roast another 20 minutes.

The skin should be charred and soft.

Take out to cool.

Rice Prep

While the peppers are roasting boil rice.

Once ready pour water off. Empty the rice in pot. Season with salt, pepper, and vegan butter.

Flat Wrap

Pour olive oil in pan just a little. Cook just a little on both sides so the wrap will be warm.

Once warm spread vegan butter on wrap and then apricot jam all over. On one side spicy avocado hummus and the other half vegan sour cream. The side with hummus place rice. The sour cream side peppers.

Time to grab! Let’s eat.
