Maple Glazed Rice Dish

Oh my gosh I used to love honey glazed salmon and rice, but now that I am a vegan I can’t have it any longer. So I thought of how I could reinvent that taste, but on a vegan dish. So this is the scoop.

The broccoli and other vegetables are frozen vegetables in a bag from Publix call Japanese Blend. It consist of mushrooms, bell peppers, and broccoli. All I had to do with that was put the bag in the microwave for 2 1/2 minutes. While that was warming I made my delicious rice. You can use any rice you like, but I used Success White Rice. While the rice was boiling I sautéed a half of an onion in olive oil. Three chopped garlic cloves was add to sauté. About a tablespoon of vegan butter was add to the onions and garlic. After the butter melted down a tablespoon of maple syrup was added. The rice was stirred in and then the Japanese Blend with about a pinch of salt and a pinch of creole season. It was delicious. I can’t wait to make it again.

This dish is quick, easy and a must have.
